The story of Costa Gavaris is beautiful. He was working at an office job while living a very conventional life. To get his head out of the office he indulged in sommelier courses. What he thought was a hobby became a passion quickly, as he was almost obsessed. In his spare time he decides to make cider. This project proves to be a total failure and Costa is devastated. It is through his torments that he realizes that his routine job makes him unhappy and that he is destined for greater.

So in 2018, Costa and his wife Jody picked up their savings, bought land in the Okanagan Falls and started planting vines. In that same year, the first bottles of the young domain, Rigour & Whimsy, leave the winery. Still waiting for their first official harvest that will be due in 2021, the young couple buys grapes from neighbors. They planted Chenin and Gamay on the edge of the Canadian desert. The clay soil, as well as the constant winds coming from the mountains, make a perfect site for these two grape varieties. The deciding factor in choosing the site is the significant variation in temperature between day and night that offers a crisp acidity to the wine.

We have only tasted one vintage for now and it is already very promising. The maceration on the white and the slight extraction on the reds allows for a glimpse of a very promising future for Rigour & Whimsey.
