Gérard Guillot first began working at Brouilly in the Domaine de la Chanal, followed by several years in Meursault at Domaine Bernard MICHELOT. In 1978, he returned to Cruzille where he founded the almost one hectare vineyard with hardwork and much conviction; Domaine Guillot-Broux with his wife Jaqueline (Broux). In 2008, Emmanuel and Patrice, sons of the founder take over the estate upon the death of their father. The 17 hectares of vineyard extend over three villages: Cruzille, Grévilly and Chardonnay divided into 3 appellations Burgundy, Mâcon Cruzille and Mâcon Chardonnay . The estate has been certified in organic farming since 1991.
The vines are mainly located on hillsides oriented to the east for maximum sunshine and on clay-limestone soils ideal for their development. The different geological formations personalize each terroir, and the resulting wines. The grapes are harvested by hand and are sorted in the vineyard before being sent to the vats so that they can be harvested healthy and with good maturity. Yields are controlled to obtain between 30 and 55 hectoliters / hectare. At the estate, there is a desire to maintain quality, not quantity and each plot is vinified separately, but only the large terroirs are marketed individually.
