Habit
California, USA

Habit is not a vineyard, at least not in the traditional sense. Habit Wine Company is Jeff Fisher, period. He is best known for his eponymous role in the televised cartoon show called American Dad. Fischer has no wine making training and no employees, but has successfully accomplished the achievement of producing unanimously acclaimed wines in a very short period of time. His wines can be found in the best restaurants of American culinary capitals such as San Francisco, Los Angeles, Chicago and New York.

From producing fifty cases of Sauvignon Blanc in 2009, he now makes thirteen hundred cases of various wines made from Pinot Noir, Cabernet Franc, Grenache (rosé), Sauvignon Blanc, Grüner Veltliner and Chenin Blanc. He only buys his grapes from the best vineyards farmed organically or biodynamically. To obtain the highest quality of berries, he buys his fruit from mythical vineyards in the viticultural areas such as Happy Canyon of Santa Barbara, Santa Ynez Valley and Santa Rita Hills. Jeff oversees the activity in the vineyard and evaluates the ideal time for harvest by analyzing the levels of acidity and sugar in the grapes. Jeff seeks a wine profile that is fruit forward, low in alcohol and fresh. Jeff vinifies his wines by himself in a cellar owned by his winemaker friends.
