Domaine Chavy-Chouet
Burgundy, France

Romaric Chavy is part of the 7th generation of winemakers of Domaine Chavy-Chouet born from the association of two of the oldest families of Meursault and Puligny. The fifteen hectares of the estate are shared between these two villages, as well as Saint-Aubin, Volnay and Pommard.

The flagship of the estate is the Clos des Corvée parcel of Citeau ""Monopole"" a hectare of Chardonnay full of history, having belonged to the Cistercian monks. It goes without saying that Romaric bathed from an early age in the world of wine, in contact with his father Hubert and also his godfather François Mikulski, famous winemaker of Meursault.

The vineyard has not seen herbicides for more than 30 years, with sulfur and copper being the only inputs used to harvest healthy grapes.

Even if he is not a fan of lees stirring and makes taut wines, Romaric combines Burgundian tradition with minimalist intervention in winemaking and innovation with gravity casks in an ultra modern winery. This precision is reflected in the elegant wines that embody the specific footprint of its terroir.
