Brasserie Auval
Quebec, Canada

In the 1930s, an agricultural school was built on the site of Val-d'Espoir, in Gaspésie. A cooperative took over the management of the land to remake the agricultural past of the place in the early 2000s. It was not until 2015 that the now legendary Auval decided to begin a project of farm and brewery by cultivating some of its raw materials such as berries, honey and some hardy grains. Indeed, only a few years later, it is already ranked among the best in the world.

Benoit Couillard, who co-founded the Pit-Caribou brewery, wanted to go back to the basics: Brew the style of beer he likes to satisfy his local market in the Gaspésie and Bas-Saint-Laurent. A true artist, Benoit also produces engravings displaying the labels of his bottles.

Victim of his talent and success, customers the world over are trying to obtain his rare beers of quality. Benoit, however, has no desire to increase his production and maintains his prime objective to remain as humble and authentic as his beers.
